Iowa State food science professor discusses consumer concerns

Ruth MacDonald is a professor and chair of the department of food science and human nutrition at Iowa State University.  At a recent CommonGround event in Omaha, we asked MacDonald  for her thoughts on some of  the top food issues and concerns being expressed by consumers today—including food safety, “local foods”, meat consumption and obesity.
