A2 dairy – more than just milk

A2 Dairy is a specific type of milk that comes from cows that produce only the A2 beta-casein protein.  Breeds like Jersey, Guernsey, and some types of Holsteins are the cows that produce that type of milk naturally.

While A2 milk is the primary product, Sanchez Philocles, with the Minnesota Agricultural Utilization Research Institute, says there are other products available.  He tells Brownfield that not only are these products good for consumers, but there is a premium market for producers.
