Buckwheat – an option for those who avoid gluten

Buckwheat belongs to a group of foods that are commonly referred to as pseudocereals.  Other pseudocereals are quinoa and amaranth.  It is high in mineral and antioxidant content.

Clara Smith, founder of Tenera Grains says buckwheat isn’t a commonly grown crop in the U.S., but there is a market for it.
