Calorie counters love jicama

A vegetable that looks kind of like a potato is gaining in popularity. It’s Jicama, pronounced “hick-uh-ma”. It’s a root tuber from a vine that stems from Mexico and South America.  Jicama has a coarse outer skin that is brown but is not edible. Nutritionists like jicama for its high fiber and low calorie content. It’s watery and crunchy and is most often eaten raw.
