Chef: Ask for the new cuts of beef at the store

Coulette or “sirloin cap”

New beef cuts are being used by chefs – but what about home cooks? Chef Laura Hagen leads the Beef. It’s What’s For Dinner culinary program and urges us not to be afraid to ask for tri-tip roast, petite sirloin or coulette, also known as sirloin cap, at the meat counter. Two of the other new cuts are the beef shoulder tender and the sirloin bavette.
