Eggplant: Love ’em or hate ’em, they’re healthy
Most of us either love or hate eggplant but the purple vegetable packs a lot of nutrition and is prolific in the summer time. Eggplant belongs to the nightshade family of edible plants which include tomatoes, potatoes and peppers. Eggplant can be enjoyed in Italian dishes such as eggplant parmesan but also seasoned and cooked simply on the grill. The MU Extension booklet Seasonal and Simple says eggplant provides potassium, folate and fiber.
