Healthy Canning

Interest in canning foods at home is growing, as a healthy and economical way to enjoy home grown foods.  So should one approach canning as they do cooking? We asked Vera Massey, University of Missouri Extension specialist, who offers canning classes every year. She says you have to go by the book and make sure you have proper equipment when canning foods at home to prevent sickness, specifically the bacteria that causes botulism.
