Pork – a safe and nutritious protein
Pork was often overcooked because there were concerns about trichinella – a parasite that once posed a food safety risk in the commercial pork supply.
But a recent report from the USDA’s Agricultural Research Service deemed trichinella to be a “negligible risk for public health.
