Safe pressure canning for healthy foods

For home canners, to be successful, they must follow the rules to preserve healthy foods safely.  That’s the message from Vera Massey who teaches canning classes for the University of Missouri Extension.  We met up with her at a recent Pressure canning class. Pressure canning is used for low-acid vegetables like carrots and green beans, also, for meat. She says pressure canning can be safely but make sure your equipment has been tested including your canner’s pressure gauge.
