Pork Shoppe upgrade helps Wisconsin fairgoers, staffers

Hungry fairgoers are finding one of the longtime food stands hosted by an agriculture organization has changed… a lot.   

The Wisconsin Pork Association’s Pork Schoppe food stand is a popular stop for fairgoers, but Executive Vice President Kari Retallick tells Brownfield the old portable kitchen needed a lot of volunteers and wasn’t as efficient as they needed it to be. “We don’t have as many county organizations and we need volunteers to actually run this business. We needed to make it easier for them and more comfortable.”

Retallick says the new setup uses two blue and white kitchen trailers, which can be set up separately or together, allowing fewer workers to get more done. “We can be cleaning up at the end of the night before we’re done selling and it just makes it more efficient for us to be able to move on and be able to get out of here before midnight, like we used to.”

Retallick says the more efficient set up also keeps customer lines moving, allowing staff to make more money to fund non-checkoff pork producer initiatives throughout the year.
