Purdue program improves safety in U.S. egg production
The creator of the Shell Egg Academy would like to grow the quality and sustainability program.
Purdue University associate professor Darrin Karcher says it’s currently offered twice a year.
“Our target audience is the workers in the production houses with the birds as well as the workers that are on the processing line,” he says.
The program debuted in 2019 and more than 300 producers have participated in the program.
Karcher says it helps improve food safety.
“The Shell Egg Academy is a workforce development program,” he says. “There were some opportunities for education related to food safety.”
He says a new needs assessment will be rolling out in 2025 to identify new educational opportunities for producers and students.
