Measuring consumer attitudes about food

To generalize consumer attitudes about food, they want food that tastes good, it’s nutritious, convenient, affordable, sustainable and affordable. That’s according to Christine Bruhn, who directs the Center for Consumer Research at the University of California at Davis. She says consumers need to hear from the agricultural community as well as academics about what’s being done in food production. One generalization that Bruhn contends is not supported by science is the perception that processed foods are bad.

“My goodness, everything’s processed; if we’re eating white or brown rice we’re not going out to the field and gathering those little kernels and thrashing them ourselves,” Bruhn tells Brownfield.
