Tomato canning – don’t forget the acid

If you plan to can your own tomatoes, don’t forget the acid. Preserving your own fresh produce is a great way to extend healthy foods into the cooler seasons but it has to be done properly. Barb Ingham is with the Department of Food Science, University of Wisconsin Extension. She says adding acid to tomatoes during canning is a crucial food safety measure.
