Tomatoes, from the vine to the jar

Canned tomatoes can bring much needed nutrients and flavor into the cooler weather but know what the ends and outs are before you try canning yourself. Barb Ingham is with the Department of Food Science at the University of Wisconsin, Madison. She says newer varieties of tomatoes require acid – as a food safety measure to reduce microbials.
