More cheese in August

Total cheese production in the U.S. in august was 850 million pounds, up 2.6 percent from August of last year. Italian type cheese production was 3.9 percent above a year ago at 350 million pounds while American type cheese production increased 1.6 percent to 345 million pounds.

Wisconsin’s total cheese production in August was 224.4 million pounds, up 8.2 percent from a year ago. American production in the Badger State increased 8.7 percent, Italian output was 8.3 percent higher and cheddar production jumped 11.8 percent compared to last August.

California’s cheese production continues to decline, 169.8 million pounds of total production in August, down 2.4 percent from a year ago. The Golden State saw American type cheese production decline 3.9 percent however cheddar production increased 5.5 percent and Italian cheese production increased 3.1 percent.

Big declines in a couple of other states as well, Idaho dropped 10.1 percent from a year ago, Utah slid 15.2 per cent and Vermont lost 20.2 percent.

Butter production in August was 100 million pounds, down 13.6 percent compared to a year ago thanks mainly to a 14.2 percent decline in California production.

Compared to August of last year:

  • Nonfat dry milk, 160 million pounds, down 8.3%
  • Skim milk powder, 10.7 million pounds, down 59.9%
  • Dry whey, 92.2 million pounds, up 3.3%
  • Lactose, 62.4 million pounds, down 1.7%
  • Whey protein conc, 34.7 million pounds, down .4%
  • Regular ice cream, 79.1 million gallons, up .4%
  • Low fat ice cream, 36.6 million gallons, up 1.2%
  • Sherbet, 4.34 million gallons, down 4%
  • Frozen Yogurt, 6.58 million gallons, up 3.5%
